Banana Coconut Chia Pudding

Have you ever tried chia pudding? If you haven’t, I’ve got a must-try recipe for you.

“Easy Peasy”, and yes yummy, very yummy. Couldn’t believe that something good for me could taste so good but it did. Here are some benefits of eating Chia. The seed provides energy, boosts strength, bolsters endurance, balances blood sugar levels, induces weight loss and aids intestinal regularity. An advantage of chia is that it has such a high antioxidant content, the seeds stay stable for much longer, whereas flax, for example, may turn rancid. I refrigerate all my seeds. But smell the seeds before using.


2 cups of almond/coconut milk
4 tbsp. Chia seeds
1 medium mashed banana
1/2 cup unsweetened shredded coconut
1 tsp. vanilla
1 tbsp. maple syrup
pinch of cinnamon
berries for garnish


  1. Place almond or coconut milk and chia seeds in a saucepan over medium heat.
  2. Simmer and whisk. When it begins to thicken, whisk in remaining items.
  3. Simmer for 5 more minutes and then separate into 4 dishes, place in refrigerator for at least an hour
  4. Garnish with blue or blackberries. It is this easy.
