  • 1 cup of jasmine rice, rinsed and drained.
  • 3/4 cup of light coconut milk.
  • 3/4 cup of coconut water.
  • Two tablespoons of butter.
  • 2 tablespoons of minced fresh ginger.
  • 1 clove of garlic, minced.
  • One tablespoon of cinnamon stick.
  • 1/8 tablespoon of white pepper.
  • 1/4 tablespoon of grated lime zest
  • One tablespoon of sugar.
  • 1/2 tablespoon of salt.
  • 1/4 cup of green onion for garnish (optional).

Preparation

To cook the delicious Caribbean coconut rice recipe, follow the steps below:

  1. Thaw the butter in a cooking pan over medium heat.
  2. Add ginger, garlic, and cinnamon stick.
  3. Sauté for about one minute or until fragrant.
  4. Stir in rice, and sauté for 2 minutes or until rice grains are opaque.
  5. Add coconut milk, sugar, salt, lime zest, white pepper, and 3/4 cup of coconut water.
  6. Stir once, cover, and reduce heat to low.
  7. Continue simmering for 15 minutes.
  8. Fluff rice with a fork, cover it and let it rest for 5 minutes.
  9. Garnish with green onion if you like.
