Ingredients
3 tablespoons fresh lemon juice, divided
1 tablespoon minced garlic, divided
1 1/2 teaspoons dried oregano, divided
3/4 teaspoon sea salt, divided
3/4 teaspoon freshly ground black pepper, divided
3 tablespoons extra-virgin olive oil, divided
1 pound boneless skinless chicken breasts
1 tablespoon oil
2 cups fresh parsley leaves
2 cups chopped cherry tomatoes
Directions
Prep:
1. Juice lemon, minced garlic.
2. Chop tomatoes and parsley.
3. Cut chicken into 1 1/2 inch cubes.
To Make:
1. Combine lemon juice, garlic, oregano, salt, and pepper in a bowl. Add olive oil, stirring with a whisk. Reserve half of the mixture for the salad. Add chicken to the remaining half; marinate in the refrigerator for 30 minutes (or up to 10 hours).
2. Thread chicken onto skewers, discard marinade.
