Strawberry Coconut Ice Pops with Chocolate Drizzle

  • 5 cups strawberries, cut in half
  • 2 tbsp pure maple syrup
  • 2/3 cup coconut milk, refrigerated
  • 1 cup dark chocolate chips
  • 1 tbsp coconut oil

Directions

Prep:

1. Cut strawberries in half.

To Make:

1. Add all ingredients into a blender and blend until completely pureed. 2. Taste and add more or less maple syrup to taste. 3. Pour into molds and add ice pop sticks. Freeze for at least 5 hours. 4. Make chocolate drizzle by melting chocolate chips and coconut oil in the microwave in 30-second increments. Stir often. 5. Remove ice pops from the mold by running the bottom part of mold under warm water. If the water is too hot it will melt the ice pops so be careful. 6. Lay on parchment paper and drizzle with chocolate. Immediately place back in the freezer. When they are set you can wrap them in plastic wrap to store in the freezer.
